Cracker Barrel Meatloaf

 



Packed full of flavour, Cracker Barrel Meatloaf is a hearty and delicious dinnertime meal that goes a long way, easy to prepare and easier to devour.

We all have that favorite meal from this restaurant that we just can't get enough of. Well, this meatloaf cracker barrel is royal. It's been a long time.

It's the only item from their menu that I order every time I go there. Unfortunately, we don't have a cracker barrel near us, so I had to improvise and make my own at home.

Let me tell you, this meatloaf is almost instantly down to the original. 

Plus I don't have to go out and spend any money to buy meatloaf, I can make it at home which makes it even better, the perfect dinner!

This is done often, maybe at least once a month in our house, and everyone always orders it, and I'm obviously not the one to complain about making it.

It's a fun imitation recipe that you'll absolutely love if it's one of your favorite menu items, too. I know that I personally can eat these Barrel Cracker Barrels of Meat daily.

We can't get enough of copycat recipes, they only save us money when we want to eat out and then realize we can make our favorites at home.

* Ingredients :

° 1 tablespoon unsalted butter
° 1/2 cup onion cut into cubes
° 1/2 cup green pepper, cut into cubes
° 2 cloves minced garlic
° 2 cups freshly grated cheddar cheese
° 1 cup crushed butter biscuits 32 crunchy pieces
° Half a cup of whole milk
° 2 tablespoons of ketchup
° 2 tablespoons light brown sugar
° 2 large eggs, lightly beaten
° 1 tablespoon Worcestershire sauce
° 1 teaspoon kosher salt
° 1/2 teaspoon black pepper
° 2 pounds of lean ground beef
+ Glaze:
° Quarter cup of ketchup
° 1/4 cup packed light brown sugar
° 1 teaspoon yellow mustard

* Instructions :

Heaat oven to 350 deg F .
Melt butter in a medium skillet over medium-low heat, add onion, sweet pepper and garlic.

Cook until softened and onions are translucent, about 5-8 minutes.
Line a 9 x 13 baking tray with foil, spray with cooking spray, and set aside.

While onions and peppers are cooking, place cheese, crackers, milk, ketchup, brown sugar, eggs, Worcestershire sauce, salt and pepper in a large bowl and stir until combined.

Add the onion and pepper, stir and then add the ground beef to the bowl, I find using my clean hands to mix everything together is easiest.

Put the mixture into a 9 x 5 loaf pan to shape it into a flat loaf. Turn the pan over and press a few times on the bottom of the pan until the meatloaf comes out on the prepared baking sheet. If you have trouble getting it out of the pan, try running a butter knife along the edges. Alternatively, you can make a large 9x5 loaf with your own hands, but it may crumble a little while cooking.

Bake for 30 minutes.

While meatloaf is baking, make glaze by adding ketchup, brown sugar, and mustard in a small bowl, stirring until combined.

After 30 minutes, glaze the meatloaf with the ketchup mixture and bake for an additional 20-30 minutes until the internal temperature reaches at least 165 degrees F and the glaze appears baked.
Leave it cool about 10 min prior slicing.
