These mini pecan pies are the ultimate pie recipe I wanted to share with you before Thanksgiving. We started with a delicious pumpkin pie recipe and now we're moving on to these delicious mini pecan pies because you can't go wrong with a mini dessert. right? Not only are these mini pancakes very easy to make, but they are also a great dessert that people can eat and enjoy.
* Ingredients :
° 1-3 oz. pkg. Soft cream cheese
° 1 piece of margarine or butter, soft
° 1 cuup Flour a nip of salt Mix cream cheese, ghee, flour & salt. form in
° 24 balls Tap each ball in the
° 1 3/4 Muffin tins (press dough into bottom and sides with fingers, leaving no holes).
+Filling:
° 2 scrambled eggs
° 1 m brown sugar
° 2 T ghee or melted butter
° 1 tsp. vanilla pinch of salt
° 1 C. chopped pecans
* How to make it :
Combine eggs, brown sugar, margarine, vanilla, and salt. Mix well (do not beat with a paddle attachment or the surfaces will become crusty instead of nutty). Divide the pecans evenly into the pastry shells. Pour the filling into the crust, filling it 2/3. Bake 351 degr about 21-26 min . Cooling little before removing from pan. Cold on wire raack. Makes 24.
