SLOW COOKER HAM AND POTATO SOUP

This straightforward soup calls for just a few basic ingredients. Add some thyme and garlic to the soup once you've diced up some ham, potatoes, carrots, celery, onions, and celery ribs. INGREDIENTS: 

• 7 medium russet potatoes, we cut them into cubes.
• Cubed ham; 2 medium packages.Of 8-ounces. 

• A large low-sodium chicken broth Container.Of 32-ounces. 

• 3 small diced carrots. 

• 2 chopped ribs celery. 

• A diced yellow onion.

• A cup and half.Of heavy cream.

• A half-cup.Of sour cream. 

• A quarter cup.Of all-purpose flour. 

• Kosher salt and freshly ground pepper, to taste

PREPARATION METHOD: 

• Step 1 – In a medium-slow cooker, I started by placing the cubed potatoes, with the ham cubes, chopped celery, diced onion, and carrots. 

• Step 2 – Then, I used the kosher salt and ground black pepper to season my soup, but you can feel free with yours!!! You can add more seasoning if desired!!

• Step 3 – After that, I added the chicken broth to the slow cooker, I preferred to use the low-sodium version to feel free to use salt in this soup. 

• Step 4 – And I covered the slow cooker using aluminum foil and simmer on high for around 5 hours until potatoes are soft when fork-tested.

• Step 5 – The potatoes do not need to be smooth; so I lightly mashed them. 

• Step 6 – At this step I whisk together the heavy cream and flour lightly in a small bowl, making sure the flour was fully dissolved, and I stir this mixture into the soup along with the sour cream. 

• Step 7 – Following that, I just cooked the soup on high for 15 to 20 minutes, until the soup was heated and creamy, before uncovering the slow cooker once again. 

• Step 8 – And, I poured the soup into serving dishes and serve it immediately to enjoy it warm!
