STUFFED BELL PEPPERS

 


Sweet peppers are an excellent filling for meat, rice, and of course, cheese. This is our favourite recipe but customization options are eternal. We use grated Monterey Jack, but feel free to substitute any other cheese on hand. You can also use another ground protein (pork, turkey, or chicken) in place of the beef. You can even use Italian sausage! Once you make this iteration, we encourage you to create your own and show us the results !

+ Sweet pepper stuffed taco

° 6 sweet peppers
° 2 pounds of ground beef
° 1/2 large onion, diced
° 8 cloves minced garlic
° 3 tablespoons taco seasoning (recipe below)
° 1 tablespoon extra virgin coconut oil, divided
° 1 cup shredded cheese of your choice (optional)

+Taco seasoning

° 2 tablespoons ground cumin
° 1 tablespoon ground coriander
° 1 tablespoon chili powder
° 1 tablespoon smoked paprika
° 1 tablespoon thyme
° 1 teaspoon sea salt
° 1/2 teaspoon ground cinnamon

* Directions :

Preheat oven to 425°F, remove peppers and cut off the top. Cut off the top of the pieces. Heaat 1/2 tsp coconut oil in a  skillet. Add onion and sweet pepper and cook for 5 minutes. Add chopped garlic and cook for a few more minutes. Then add the meat and cook for another 15 minutes. Add taco seasoning and stir well. Let to simmer about an additional min or 2 min . Rubbing coconut oil on outside of bell pepper. Fill every pepper with taco meat. Cover with shredded cheese, if using, and place on a parchment-lined baking sheet. Bake for 12 minutes.
