Sweet Blueberry Biscuits

 


Fresh cranberry biscuit covered in a sweet and sticky glaze. These blueberry biscuits are a delicious breakfast!

 I was at a bed and breakfast taking a little vacation with my husband before the kids. I've never had a warm biscuit stuffed with delicious blueberries and then topped with a sticky glaze and that was just heaven!

I've seen similar cranberry biscuits with glaze when I lived in Atlanta in Popeyes or made by Pillsbury, but none of them could hold a candle to these delicious biscuits!

* Ingredients :
  
° 2 cups all-purpose flour + 1 teaspoon
° 2 teaspoons baking powder
° 1 teaspoon salt
° 1 tablespoon sugar
° 6 tablespoons unsalted butter - cold
° 1 cup of yogurt, see notes for alternatives
° ⅔ blueberry cup
° glaze (optional)
° Half a cup of powdered sugar
° 1 tablespoon melted butter 
° 2 tablespoons milk
° Half a teaspoon of vanilla extract


* Instructions :
 
Preheaat oven to 425 degrees also line a baking tray with parchment paper. Put the butter in the freezer for 10 minutes. Rinse and dry the berries well, then place them in a small bowl with 1 teaspoon of the flour in it to help absorb any extra moisture.

In a large bowl, add flour, baking powder, salt and sugar. When measuring the flour, scoop it from the bag to the cup with a spoon and flatten the top with a butter knife for accuracy. Blend dry ingredients together also set apart .

As soon as the butter has been in the freezer for 10 minutes, remove it and grate it with a cheese grater. Adding butter to dried ingredients, separating any clumps with your fingers. This aids distribute the butter evenly throughout the dough.

Add the curd to the cookie dough and stir until the flour mixes with the dough. Be careful not to over mix as it may make the biscuits hard and tough

Quickly fold the blueberries into the dough. The blueberries should be evenly distributed in the dough, but try again to mix the dough as little as possible.

Using a 1/4 cup, cut 10 biscuits that are touching each other in the pan. The dough will be a little sticky. Bake in the oven for 15-18 minutes or until fully cooked through and starting to brown slightly.
