Roast, potatoes, Onions & Carrots

 


The pork slices are filled with boiled eggs and green olives, fried in the oven, and garnished with onions, potatoes and sweet carrots. This garnish can also accompany roasted chicken, turkey, or pork cooked in sherry.

* Ingredients :

° 3 pounds of whole pork
° 3 fully boiled eggs
° Handful pitted olives green
° Semi a tsp ground pepper
° 1 olive oil spray
° 1 tsp oregano crushed
° to tasting the salt
° to decorate
° 5 medium potatoes
° 4 medium carrots
° 2 large onions
° Two glasses of white wine
 ° ½ cup water or vegetable broth
° 2 tablespoons of sugar
° pinch of ground pepper
° 1 pinch nutmeg
° 2 tablespoons olive oil
° 1 tablespoon lard

* Steps

Empty the pork chop and add the boiled eggs and olives. Place on a piece of tin foil and season with oregano, pepper, oil and salt to taste. Wrap in foil and bake for about 20 minutes at a moderate temperature.

Meanwhile, peel the potatoes, carrots and onions and cut them into medium pieces and fry in a saucepan with olive oil and melted lard until light brown. Add the white wine and let it reduce by half.

Add sugar, season with pepper, nutmeg and salt to taste and mix. Pour water or broth and simmer over low heat until potatoes and carrots are soft and a kind of sauce is formed. Sit aside.

Remove the loin from the oven to remove the aluminum foil and continue baking until golden brown. To serve, cut them into slices and accompany them with onions, potatoes, and sweet carrots in their own sauce.
