Pecan Pie Pound Cake !


* What do you need:

°4 sticks butter
°4 cups sugar
°4 cups flour (cake or all-purpose)
°8 eggs, 8 oz cream cheese
°2 to 3 tsp vanilla flavor

* How to make it:

Heat oven to 300 degrees F .

In a mixer, cream butter, cheese and sugar until smooth. Add eggs, one at a time. & adding flour one C at a time. Finally, adding vanilla flavor.

Grease and flour tube/small bowl and pour mixture into batter. Time mix is poured, sprinkling pecans & brown sugar on top (a cup or a little more of each). Gently tap mix.

Baking at 300 degrees F  for 1 hour and 15 minutes. (You may want to cover the top with aluminum foil to prevent the nuts from burning.) Then raise the temperature to 325°F and bake for an additional 30 minutes.

Test the cake with a fork or wooden skewer to check if it's done. The pot should come out dry and clean (no mixture). Bake for an additional 5 minutes if necessary.

Remove from the oven and leave for a few minutes to cool before removing them from the pan. When flipped onto a plate, you may lose a few nuts, but most of them should bake into the top layer of the crust.

Flip the cake onto another plate so that the nuts are on top. Sprinkle a cake covered with a carton of caramel ice cream. The heat from the cake will make the caramel melt over the pecans.
