* Ingredients :

°3 extra pounds of roast beef
°4 carrots chopped
°2 pounds mashed potatoes
°1 chopped onion
°3 whole garlic cloves
°1 tablespoon of cornstarch
°2 tablespoons cold water
°2 tablespoons Worcestershire sauce
°Salt and Pepper
°1 tbsp. fresh thyme (optional)

* Directions : 

Whisk the cornstarch and cold water together in the bottom of the slow cooker.
Add the potatoes, carrots, onions, and garlic to the slow cooker. Season with salt and pepper.
Season the meat with salt and pepper. Put it on top of the vegetables.

Pour Worcestershire over it and simmer for 8-10 hours. Cut the beef into strips when it is ready to serve. Depending on the water content of the beef, the broth on the bottom may be the right consistency. If it's not simmering, add a little cornstarch if needed.

Use celery, parsnips or sweet potatoes to reduce carbohydrates
Leave out the cornstarch or use arrowroot to reduce carbs
