* Ingredients :

°10 soft taco shells
°2 cups cooked and shredded chicken
°2 cups shredded Monterey Jack cheese
°3 tbsp. butter
°3 tbsp. flour
°2 cups chicken broth
°1 cup sour cream
°1 (4 oz) can diced hot green pepper

* Directions : 

Preheat oven 350 degrees. Grease fry pan 9 * 13
Mix chicken and 1 cup cheese. Roll up in tortillas and put in the skillet.
In saucepan, melting butter, stir in flour also cook for 1 min. Add the broth and whisk until smooth.
Heat it on medium heat To it becomes thick also bubbling.
Stir in sour cream and hot pepper. Don't boil, you don't want curdled sour cream.
Pour over enchiladas and cover with remaining cheese.
Bake for 22 minutes, then leave on high heat for 3 minutes to brown the cheese.
