Weeknight Chicken Stir-Fry



My Super Simple Simple Teriyaki Chicken Stir-Fry is an amazing combination of wok-fried tender chicken pieces, lots of vegetables and homemade teriyaki sauce!  Serve this nutritious and delicious dish over rice or teriyaki noodles and you'll have a great weekday dinner!

* ingredients :

°1 tablespoon cooking oil (canola oil is best)
°1/2 cup zucchini (or broccoli - washed, chopped, and cut into equal size pieces)
°1 small yellow onion (cut into 1-inch pieces)
°1 cup snow peas (or snow peas)
°1 cup sweet peppers (red, orange, yellow, or green—cut into 1-inch pieces)
°½ cup carrots (washed and sliced)
°2 teaspoons sesame oil
°1 pound chicken thighs (boneless, skinned, and cut into pieces)
°½ teaspoon salt and pepper (to taste)
°½ cup teriyaki sauce
°1 tablespoon sesame seeds (optional, garnish)

*instructions :

In  skillet skillet, heat cooking oil on heat to oil become to shimmer. Add the vegetables (zucchini or broccoli, onions, peas or peas, peppers and carrots) and saute until the vegetables are soft and crispy.
1 tablespoon of cooking oil, 2 cups of zucchini, 1 small yellow onion, 1 cup of peas, 1 cup of sweet pepper, ½ cup of carrots
Transfer vegetables to a plate, and return skillet or wok to medium-high heat with sesame oil added. Season the cubed chicken pieces and fry until slightly cooked and browned.
2 teaspoons sesame oil, 1 pound chicken thighs, ½ teaspoon each, salt and pepper
Add the teriyaki sauce and cook with the chicken to heat it up. Next, returning sautéed vegetables to your wok or skillet & frying to coat well & heat through.
½ C teriyaki sauce
Removing to heat & serving immediately. Garnish with sesame seeds, if desired.
