Camping Farmers Breakfast







* ingredients :

°6 medium sized balls
°8 slices of bacon
°1 medium onion chopped
°6 eggs
°Salt and Pepper
°butter
°parsley (optional)

* Directions :

Cook potatoes, with their peels, in boiling salted water until tender.
Cool, peel, or leave in cubes or slices.
Cut the bacon into small pieces and fry over medium heat to the desired crispness. Drain it on a paper towel.
Add aprox. 2 tbsp. Butter into bacon fat and fry onions until translucent.
Add the potatoes to the pan with the onions and fry until a crust forms. Bacon back.
Crack the eggs into the potatoes and mix them with everything. Salt and pepper to taste. Be careful with the salt, because bacon is salty. We finish with parsley.
Good as a side dish, breakfast of course, or as a main meal for two with a green salad.
Cooking time after the potatoes have cooled.
