Squash Croquettes


•2 c yellow squash, finely chop
•1 cup onion, finely chop
•1 egg, beat
•1 tsp salt
•1 tsp pepper
•½ c plus 1 tsp flour
•vegetable oil


In bowl, mixing squash, onion, egg, salt also pepper. Mixing well. Stirring in flour.
In a skillet, heat ½-inch oil on medium-high heat.
Drop batter by tsp to oil.
Cooking about 3 min per side or to golden brown, turning once.
Drain croquettes on paper towel
Serving with ranch or Even lemon dill sauce.
