Cabbage soup recipe

This cabbage soup  does the impossible: it uses an entire head of cabbage in one go! Almost every time I buy cabbage, I throw it away for weeks, add a little to kale, a little to a bowl, more to a taco, etc. So the first time I made this cabbage soup recipe, I was shocked. I started by adding half the cabbage. When wilted, it melted into the soup with fragrant vegetables and herbs. I didn't want it to go away - I was making cabbage soup, after all - so I added more. Before I knew it, every ounce cabbage was in the jar!
