Just had this as a snack and still thinking about the flavors. Love keeping this in my fridge

 


Ingredients:


3 cucumbers, peeled and sliced

3 tomatoes, cut into wedges

1 onion, thinly sliced

1/4 cup oil

1/4 cup sugar

1/2 cup vinegar

1 cup water

2 tsp salt

1 tsp black pepper

Method:


Mix cucumbers, tomatoes, and onions in a large mixing bowl.

For the marinade, whisk together vinegar, oil, sugar, water, salt, and pepper until sugar and salt are fully dissolved.

Gently pour the marinade over the veggies, ensuring they're well-coated.

Cover and chill for a couple of hours, letting all those flavors meld together.

Dish it out and dive into the refreshing flavors of summer. Enjoy!
