Hawaiian Wedding Cake with Whipped Cream-Cream Cheese Frosting!

 



A sweet, tart and creamy Hawaiian wedding cake - whatever cake you want! It's a sweet vanilla pineapple cake topped with crushed pineapple, dreamy cream cheese and whipped cream.

 

 And when I say apprentice, I mean I took a couple of days training and then was hired free to be the cake designer for the entire store. No pressure, right?

 

The first few weeks were a bit superficial, but for the most part, I was able to hold on to myself when orders arrived. And that is until we received an order for 6-layer cake, 26 "10", 6 layers which were all different flavors due to the following day.

 

Dessert cakes are very simple to decorate, but most time-consuming part was make all mousses, fillings, & whipped creams they wanted . I usually kept a good stock of baked cupcakes in the freezer to pull out and garnish them as wanted , but this time my stock was totally depleted & I needed to bake cupcakes as well.

 

* Ingredients

 

° 18.25 oz pack Yellow Cake Mix

° 40 ounces of crushed pineapple with preserved juice - 2, 20-ounce cans

° 3.4 ounce instant vanilla pudding mixture

° 1/2 cups cold milk 2% fat or more

° An 8-ounce package of cream cheese

° 2 cups whipping cream

° 3 tablespoons of sugar

° 1 cup peeled and roasted coconut

 

* Instructions :

 

Strain the pineapple and reserve the juice. Sit aside.

Prepare cake according to prepackaged instructions, using pineapple juice instead of water. Bake in a 9 '' x 13 '' skillet. Let it cool completely.

 

Once cool, use a wooden skewer to poke holes all over the cake.

Spread the drained pineapple on top and set aside.

 

In an electric mixer, whisk whipped cream and sugar until medium hard peaks form and transfer to a large bowl.

 

In an electric mixer, whisk the soft cheese until smooth. Add milk slowly a little each time, and beat until smooth between each addition. Rake  sides of bowl much .

 

When all the milk has been added, mix the pudding mixture and blend for two minutes. Gently mix the pudding mixture into the whipped cream, and blend until combined.

 

Spread the mixture evenly over the top of the pineapple. Top the cake with toasted coconut, cool and serve!
