Meatball Boats

 




Homemade meatballs are a right of passage in an Italian family. I learned how to make me from my mother-in-law. Its recipe is for a wholegrain meat sauce, so when I want to have meatballs on weekdays, I choose a short cut and make it in my crock pot. This is not a quick meal, but an easy one, with just a few ingredients and meatballs I can prepare multiple meals if I do more, like I do.

* Ingredients :

° 1 pound ground meat
° 1 large egg
° 1/3 C breadcrumbs
° ¼ Parmesan cheese
° 1 tablespoon. Minced garlic
° 1 tablespoon fresh chopped parsley
° Salt and pepper to taste
° 1 tablespoon of olive oil
° 2 c marinara sauce
° 8 Mini Huggie Rolls
° 12 slices of Asiago cheese

* Instructions :

Preheat oven to 350 degrees.
Prepare the baking tray with a non-stick spray.
Add ground meat, eggs, breadcrumbs, garlic, parmesan, garlic, and parsley in a bowl.
With your hands, the ingredients work together.
Add salt and pepper.
With an ice cream scooper start forming meatballs.
Sit aside.
Add the oil to the skillet and heat it to a medium temperature.
Add one meat ball at a time to the hot skillet.
Cook for about 5 minutes or until browned on all sides.
Place the meatballs on a baking tray covered with parchment in the oven.
Cook for 12 minutes.
Take it out of the oven and put it on the side.
Cut an oval on the top of the roll, leaving about an inch on the ends and sides.
Scoop out but don't cut the lower half of the bobbin.
Use a knife to scrape the top of the roll.
Place the roll on a baking tray.
Place a slice of cheese in the hollow area.
Returnning to oven and cooking about 8 min .
Add 2 tbsp. Of marinara over cheese.
Put 3 meatballs over the cheese.
Add more marinara over the meatballs.
Lay the grated Parmesan cheese on top of the marinara.
Returnning to oven also baking for 7-8 min .
