Cheesy ground beef quesadillas

 


Chussy Quesadilla was the 4th recipe I've ever published in A Flavor Journal! Needless to say, it's time to glow up!

Although the pictures are much better than they used to be, I actually decided to simplify the recipe list a bit. This recipe now includes ten main ingredients, not counting the butter (or oil) or salt and pepper. I'm currently working on a list of staples, so I'll be linking to that very soon! It is created as a supplier of ingredients that you should always have on hand, and make your life a lot easier. It won't be crazy, but the basic suggestions (like oil, salt, and pepper) will be on it.


* Ingredients :

° 1 tbsp. unsalted butter
° 1/2 cup finely chopped tomatoes
° 1/2 cup finely chopped green, yellow or red bell pepper
° 1/3 cup finely chopped white onion
° 1 clove minced garlic
° fresh salt and pepper
° 1/2 pound minced meat
° 1 tbsp. taco seasoning
° 1/3 cup fried beans
° ° 3 10 flour tortillas
1 1/2 cups shredded cheese mix, cheddar cheese, pepper jack, ° monterey jack, or chihuahua cheese
+Topping options:
° guacamole
° pico de gallo

* Instructions :

If using more than one cheese, mix the cheeses together.
Melt the butter in a large skillet over medium heat. Add tomatoes, sweet peppers, onions and garlic with a pinch of salt and pepper. Cooking about 5-7 min, until slight soft.

Add ground beef and taco seasoning to skillet. Using a wooden spoon, chop the meat into small pieces and mix it with the vegetables. Cook the beef for 5 minutes, until browned, continuing to break it into small pieces as it cooks.

Stir in the beans until completely blended with the beef and vegetables. Pour the entire mixture into a large bowl, and cover the bowl with aluminum foil to keep it warm.

Put a piece of tortilla in the now empty pan. Sprinkle ½ cup of cheese on top of the tortilla. spoon 1/2 cup of beef blend onto one side of tortilla, then spreading it on half of tortilla to covering cheese.

Once the cheese has melted on the other half of the tortilla, carefully fold that half over the beef mixture. Use a spoon to gently press the top of the folded tortilla. Cook for 2 minutes until bottom is brown and crunchy.

Carefully flip the tortilla. Cooking for an additional 2 min, TO under side is brown also slit . Transfering quesadilla to a cutting board & allow it to cooled for about 31 sec . Employ a pizza cutter .

Renew with the remaining tortillas, remaining cheese, and remaining meat mixture.

Serve hot with sour cream, pico de gallo, guacamole or your favorite toppings!
