Having prepared the recipe in person, we have to say that it hardly falls into the "do nothing" category! According to blogger, Dan of Cakes Cottage, it's an old country - Southern family cake. He cares about this cake and says it's full of flavour! So before you get too excited, there is a little work to do to make this cake.
However it is very easy. It's as easy as making a cake box, Dan says, so if you can make one of these, you'll be fine with this! We love old-fashioned cupcakes and if you can save 10 minutes, this recipe is for you.
+ Cake :
° 2 cups flour
° 2 cups of sugar
° 2 eggs
° 1 teaspoon vanilla
° 1 medium size pineapple, crushed, undrained
° 1 teaspoon baking soda
° 1/2 teaspoon salt
Preheat oven to 350. Mix all ingredients, pour into prepared 13 x 9 pan and bake for 40 minutes.
+ Topping :
° 1 stick of butter
° 1/2 cup white sugar
° 2/3 cup evaporated milk
° 1/2 cup brown sugar
Combine in a medium saucepan and cook for 5 minutes, not boiling.
Remove from fire and stir :
° 1 cup coconut
° 1 cup chopped pecans
Pour the mixture over the hot cake. After it cools, the cake is kept in the refrigerator.
