DO NOTHING CAKE

 



The summer days, when one could hardly look at the fireplace, were at last beginning to come to an end. We'll soon be enjoying a breath of fresh air when we step on the cold kitchen floor and turn on the oven.


But before we dive into the more complex holiday recipes for high baking season, I'd like to get ready for some quick one-pot recipes.


Why bother when there are so many recipes from the prepackaged era designed to solve exactly this problem?  Do-Nothing Cake.



* Ingredients:


° 2 cups of sugar

° 2 cups flour

° 2 eggs

° 1 teaspoon baking soda

° 1 teaspoon vanilla

° 16 ounces mashed pineapple, not drained

* Icing:

° 1/2 cup butter

° 1 cup sugar

° 3/4 cup evaporated milk

° 1 cup coconut

° 1 cup nuts

° 1 teaspoon vanilla


* Instructions :


Put first 6 ingredients in a bowl and mix until combined with a spoon.

Pour into a 13" x 9" cake pan.

Bake at 350°F 35-40 minutes.

For icing: Mix together butter, sugar, and evaporated milk and cook over medium heat until it thickens slightly. (This usually takes about 5 minutes when boiling.)

Removing it from heat and adding rest ingredient
