No-Bake Pineapple Cream Dessert


Pineapple Cream Dessert: perfect for summer
Looks like pineapple is just a screamer of summer! Well, I know it's available year-round, but its tropical origins put it squarely in the summer category—at least for me.

Another reason it's the perfect summertime dessert is that it's not baked at all!

If you like cheesecake...
Then you will love this dessert!

The filling is a creamy pineapple-flavored cheesecake stacked on top of a buttered graham cracker crust. It is absolutely delicious.

Keep in mind that a cheesecake layer can also be used as a sweet dip. Of course it goes well with graham crackers, but it's also good with vanilla or chocolate chips.

* Ingredients :

° 8 ounces soft cream cheese
° 8 ounces of baby shower shake
° 14-16 large ounces crushed pineapple, drained
° 3/4 cup confectioners' sugar
° 1/2 cup pineapple chunks
° 1/2 cup shredded coconut for garnish.
° 1 1/2 cups graham crackers
° 1/3 cup sugar
° Half a cup of melted butter

* Instructions :

For the crust: Mix the graham crackers with the sugar. Add the melted butter and stir until well combined. Press into an 8 x 8 or 9 x 9 inch skillet.
Filling: In a large bowl, whisk together the soft cheese and confectioners' sugar until very smooth.
Beat in a basin of whipped cream. Then add the drained pineapple.
Spread the filling over the crust. Cover with pineapple pieces and sprinkle with coconut.
Cool well - at least 4 hours, preferably overnight
