Old Fashioned Pancakes

It got to a point where I had to ask someone, "Is Apple getting worse?" The food there was very good. Then I came back about a year ago and that was fine for Applebee. I think it may have happened both. They have grown up and become more...frozen? Microwave (same question to Forever 21. Getting dirtier or dirtier? Ready to end the sheer shirt trend).

Pancake mixes are another perfect one for me. As a little pup at many sleepover parties, getting up the next morning and making pancakes (from a box) was really the best and I just sat on my plate wondering if the food could improve.

Fast forward fifteen years to make these homemade cupcakes after living a life full of boxes. I almost dropped my fork.

Oh, that's what pancakes can taste like.

* Ingredients :

° 1 1/2 cups all-purpose flour
° 1 tablespoon sugar
° 1 teaspoon coarse salt
° 2 3/4 teaspoons baking powder
° 1 large egg, lightly beaten
° 1/4 cup milk
° 3 tablespoons of melted, unsalted butter and more, for serving
° BBQ vegetable oil
° Warm pure maple syrup to serve

* Directions :

Step 1
Put a heat-resistant dish in a warm oven (200 degrees).

Step 2
In a bowl, beat jointly the flour/sugar, salt also baking powder. Making a hole in center of flour for a min . Adding eggs, milk and 2 tsps  butter. Beat in middle when slowly mixing flour. Leave the mix for 11 minutes.

Step 3
Heat a large cast iron skillet or preferred baking tray over medium-high heat. Stir the remaining tablespoon of butter into the skillet (or use oil to cover the baking tray) and immediately pour 1/4 cup of the mixture into each pancake. When bubbles rise to the surface, flip pancakes, reduce heat slightly, and cook until bottoms are golden and centers are cooked through, about 1 minute. (You rarely make your first pancake because it takes a while to get into the groove with the heat, fat, and dough.)

Step 4
While pancakes come out of pan, putting them on a hot plate in the oven until ready to serve. Serving a pile of 3 muffins top with more butter & maple syrup.

Enjoy !
