Stuffed Cabbage Rolls

You can find a variety of cabbage rolls throughout Europe, Asia, and Africa. This recipe is based on gołąbki, a Polish dish in which boiled cabbage leaves are coated with a minced meat filling of either pork or beef with onions and rice. What I like the most is that the meat and rice are cooked in the same cabbage. To ensure even cooking, do not use the outer leaves of the cabbage - they do not contain a lot of moisture. Also, don't forget to cover the baking dish with aluminum foil. You need the steam to circulate!

Don't feel like rolling? Make an unstuffed cabbage casserole instead. 😏

With both added sugar (brown sugar) and carbs like rice and breadcrumbs, it's hard to adjust this recipe for the keto diet. While removing the sugar won't affect much, removing the rice and breadcrumbs will make it very difficult to roll the meat mixture into the cabbage. If you want to make something similar, try the cabbage burrito! Without beans and corn, it's perfectly keto-friendly.
