CHEESE POTATO & SMOKED SAUSAGE CASSEROLE

A rich and creamy sauce is used to coat the potatoes, which are partly cooked and combined with chopped smoked and cured sausages before being baked. Because this recipe calls for smoked and cured sausages, there is no need to cook the sausages first. THIS IS ALL YOU NEED TO MAKE A CASSEROLE FOR 6 SERVINGS:

– 3 Pounds.Of russet potatoes; I peeled and cut them into cubes, and boiled until tender but not mushy.

– 1 pound.Of thinly sliced smoked sausage.

– 4 large spoons.Of soft butter. 

– 4 large spoons.Of all-purpose flour. 

– 2 Cups.Of half&half/milk.

– Salt and pepper, to taste

– Half a pound.Of cubed Velveeta cheese.

– Half a cup.Of grated sharp cheddar cheese. 

– A pinch.Of smoked paprika

PREPARATION METHOD: 

– Step 1: First, you need to sauté sausages in 2 large spoons of olive oil in a big pan over medium-low heat, rotating and stirring often, until they have browned a little on the edges. 

– Step 2: And, lightly coat a 9-by-13-inch baking dish with nonstick cooking spray to prevent sticking. Transfer the cooked potatoes and sausage to a baking dish and toss only until the ingredients are evenly spread. 

– Step 3: After that, you need to increase the heat to medium and pour the butter into the pan, stirring constantly. 

– Step 4: When the butter is completely melted, mix in the flour, and allow to simmer for approximately a minute, whisking continuously, to completely eliminate the flour flavor from the sauce. 

– Step 5: Following that, whisk in gradually 1/4 to 1/2 cup at a time, until the half and half are equally distributed throughout the mixture. Continue to simmer until the sauce has thickened. 

– Step 6: Slowly add the Velveeta and season with salt and pepper until the cheese is melted and the sauce has smoothed out, stirring continuously. 

– Step 7: Then, spread the cheese sauce over the potatoes and meat in an equal layer. Sprinkle the grated cheese on top in an equal layer. 

– Step 8: Bake for around 45 minutes, until potatoes are fork soft and the top of the casserole is brown.
