Farmer's Casserole




Put the ingredients in a baking dish the night before, cover and put in the refrigerator. In the morning, put the casserole in the oven about an hour before serving. Served with watermelon slices, fresh strawberries, and orange wedges.

* ingredients :

° 3 cups frozen brown potatoes
° cup shredded pepperjack cheese
° 1 cup cooked pork, diced
° cup chopped green onion
° 4 scrambled eggs
° 1  can milk evaporated
° Half teaspoon ground black pepper
° Half a teaspoon of salt

Step 1
Preheat oven 350°F (175°C). Grease a 2-liter baking tray.
Step 2
Arrange the brown potatoes evenly in the bottom of the prepared dish. Sprinkle with chili cheese, ham, and green onions.
Step 3
In a medium bowl, mix eggs, evaporated milk, pepper, and salt. Pour the egg mixture over the potato mixture in the dish. The dish can be covered and refrigerated at this point for several hours or overnight.
Step 4
Bake for 40 to 45 minutes (or 55 to 60 minutes if previously prepared and cooled) in the preheated oven, or until a knife in the center comes out clean. Leave it for 5 minutes before serving.
