Baked & Sour Chicken!



* Ingredients
+chicken:
° 3-4 boneless, skinless chicken breasts (about 2 pounds)
° Salt and Pepper
° 1 cup cornstarch
° 2 large eggs, scrambled
° 1/4 cup canola oil, vegetable oil, or coconut oil
sauce:
° 1/2 to 3/4 cup granulated sugar (depending on how sweet your sauce is)
° 4 tablespoons ketchup
° 1/2 c apple-cider-vinegar (see note for alternatives)
° 1 tsp soy sauce
° 1 tsp garlic salt
 
* Methods : 

Heat the oven to 325 degrees Fahrenheit.
Cutting chicken breasts to 1-inch  Seasoning little with salt & pepper. Placing cornstarch in  gallon--size ziplock bag. Placing chicken in tbag with cornstarch & seal, turning to coat chicken.
beat eggs together in shallow pan. Heat oil in  skillet on medium heat to very hot and crispy. Dip cornstarch-coated chicken pieces in egg and carefully placing them in  single layer in hot skillet.
Cook for 20-30 seconds on each side until the crust is golden but the chicken isn't quite cooked through (this is where it's really important to have a hot skillet/oil). Put chicken pieces in single layer on a 9" x 13" oven tray & repeat with rest of chicken pieces.
Blend sauce ingredients in bowl & pour on chicken. Baking about 1 h, turn chicken once or 2 while cooking so that it is equally coated with the sauce. Serve on hot steamed rice.
