*Ingredients:
° 1 package smoked sausage, sliced
° 1 onion, peel & chop
° 5 large potatoes, peeled and diced into 1/2-inch cubes
° olive oil
° sea salt
° Freshly ground black pepper
° sweet red pepper
° dried thyme
° cheddar cheese
* Directions :
Heat oven 400 * f .
Line a large baking tray (with sides) with several sheets of tin foil and spray with cooking spray. Sit aside.
Put the sausage, onion and potatoes in a large bowl. Drizzle a few tablespoons of olive oil and season with salt, pepper, paprika and dried thyme to taste. Flip with your hands so everything is evenly distributed. Pour it to baking tray & spreading it out as much as possible.
Place in the hot oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden and tender. Turn off the oven.
Sprinkle the cheese over the cooked meat and potatoes, then transfer to the oven for a few minutes to melt the cheese.
