Parmesan Garlic Roasted Potatoes


°Potatoes cut into smaller pieces (I use russet potatoes)
°A few tablespoons of olive oil
°2-3 cloves minced garlic
°1-2 tablespoons fresh chopped parsley
°Fresh grated parmesan cheese
°Salt and pepper to taste

Heat the oven to 450 degrees Fahrenheit.
Cut the potatoes into cubes or wedges. Bring a pot of water to a boil.
Add potatoes and cook for 3 to 6 minutes, depending on size.
While the potatoes are cooking, put the oil in a cast iron or other heavy skillet
frying pan and heat it in the oven.
Drain the potatoes and put them back in the pot. Return the bowl
On the stove, shake to dry and stir the potatoes
surface. This is what gives roasted potatoes the perfect crust.
Add the potatoes to the hot oil and stir until covered and grilled once or twice.
When the potatoes are almost soft, sprinkle them fresh
Garlic, Parmesan, salt and pepper and continue roasting until
Potatoes are soft. Flip again at least until browned.
Just before serving, add fresh chopped parsley.
