Weeknight-Chicken-Stir-Fry


* Ingredients :

°1 pound boneless, skinless-chicken breasts, cut to 1-inch pieces
°2 clove garlic
°2 tsp minced ginger
°1 c chicken broth
°3 tsp soy sauce
°2 tsp sugar
°2 c greens (I use broccoli, peas, & bell peppers)
°2 tsp cornstarch
°Roasted sesame seeds (optional)
°4 servings of cooked rice

* Preparation  :

Spray a 12-inch nonstick skillet with cooking spray; Heat on medium high heat. Add chicken, garlic and ginger. Frying 5 to 6 min .  Add 3/4 cup of the broth, soy sauce, and sugar. Covering & cooking on medium heat for 5 min, stirring twice. Adding vegetables.
Covering & cooking about 5 min, stir occasionally, until the chicken is lightly browned in the middle and the vegetables are tender. Mix the cornstarch with the remaining ¼ cup of the stock, then pour it into the chicken mixture. Cook, stirring frequently, until sauce thickens. Serve on rice & garnish with toast sesame seeds, if wanted.
