Snowball cookies


Coconut, cream cheese and white chocolate cookies are simply delicious! Think of this easy and fun Christmas barn recipe!

*ingredients :

°155 ml (about 2/3 cup) shortening or unsalted butter
°1/2 cup (125 ml) cream cheese
°180 ml icing sugar
°60 ml (1/4 cup) sugar
°10 ml (2 teaspoons) vanilla extract
°560 ml (2 1/4 cups) flour
°1.25 ml (1/4 teaspoon) salt
°225 gm white chocolate, cut into pieces
°60 ml (1/4 cup) 15% cooking cream
°750 ml (3 cups) sweetened shredded coconut

* Steps :

In a bowl, whisk together 1/2 cup (125 ml) of shortening, cream cheese, icing sugar, and vanilla extract until a creamy mixture is obtained.
In another bowl, mix the flour with the salt.
Add the dry ingredients to the wet ingredients and stir until combined.
Using your hands, form 28 balls, using about 15 ml (1 tablespoon) of dough each. Place the balls on a baking sheet lined with parchment paper, spaced about 5 cm (2 in) apart. Chill for 30 minutes.
When you're ready to bake, preheat the oven to 205°C (400°F).
Bake cookies for 8 to 10 minutes. We take it out of the oven and let it cool on a rack.
In a double boiler, melt white chocolate, cream and 30 ml (2 tablespoons) of ghee.
In a bowl, put the coconut. Roll the balls in melted white chocolate, then cover with coconut.
Set aside in the refrigerator for 20 minutes, until the chocolate is set. These cookies stay cool.
