Famous Chicken Carbonara


° 1 pound boneless, chicken breast
° 3 slices of bacon, cooked and drained
° 1 tablespoon of butter
°salt and pepper to taste
° Half a tablespoon of olive oil
° 1 small onion, diced
° 3 cloves garlic, minced
° 2 Laughing Cow Cheese Wedges
° Half a cup of low-fat and half
° Half a cup of grated Parmesan cheese
° 1 cup frozen peas
° 1 1/2 cups cooked pasta according to package directions
° 1 cup chicken broth
° 1 tablespoon of water
° 1 tablespoon of cornstarch
° Parsley, optional, for garnish

* instructions:

The first step:
Cook the bacon and set aside
Cook and drain pasta
The second step:
In a skillet, cook chicken in butter for 5 to 6 minutes on each side.
Set aside to cool, then cut into 1-inch pieces
Third step:
In the same skillet, add garlic, onion and oil. Cook until onions are slightly crunchy and not burning
Add the cheese wedges, half and half, and chicken broth and whisk together until cheese melts
The fourth step:
Add the drained pasta, peas and Parmesan cheese
In a small bowl, mix the water with the cornstarch
Fifth step:
Mix in the pan until the sauce begins to thicken
Shred the bacon, add the shredded chicken and bacon to the skillet and stir well.
Sixth step:
Sprinkle parsley for garnish
