REALLY FLAKEY PIE DOUGH


* Ingredients :

°2 1/2 c (325 grams) flour
°1 teaspoon kosher salt or use 1/2 teaspoon sea salt
°1 tsp sugar (optional)
°1 c (230 grams) very cold un-salted butter, cutting to 1/2-inch cubes (2 sticks)
°4 to 8 tablespoons of ice water

* Directions :

Add 1 cup flour, salt, and sugar (optional) to a food processor. Whisk the mixture 2 to 3 times until smooth. The remaining cup of flour will be added later.
Sprinkle the butter cubes over the flour and beat until a dough or batter forms, about 15 seconds. (There should be no unpolished flour).
Scrape the bowl and spread the flour and butter mixture, then add the remaining cup of flour. Beat the mixture 4 to 5 times until the flour is evenly distributed. (The dough should look a little broken and crumbly.)
Transfer the ingredients to a medium bowl and sprinkle ice water over the mixture - start with 4 tablespoons and add from there. Using a rubber spatula, press the dough into itself. The crumbs should start to form larger clumps. If you pinch off some of the dough and it sticks, it's ready. If the dough breaks, add 2 to 4 tablespoons of water and continue to apply pressure until the dough comes together.
Remove the dough from the bowl and place in a mound on a clean surface. Stir the dough just enough to form a ball. Cut the ball in half and shape each half into discs. Wrap each tablet in plastic wrap and place in the refrigerator for at least 1 hour and 2 days. You can also freeze it for up to 3 months (just thaw it overnight in the fridge before using it).
