°2 teaspoons of yeast.
°1/2 teaspoon baking soda.
°1 teaspoon of salt.
°1/2 cup cold unsalted butter. cube.
°1 cup cold curd.
°extra flour for dusting.
°Melted butter for greasing.
*Directions:
Step 1:
Set the oven to 425°F (220°C) and turn it on, meanwhile place a parchment paper on a baking sheet.
2nd step:
Next, you need to mix the flour, baking powder, baking soda, and salt in a large bowl. Make sure all the dry ingredients are well mixed.
Step 3:
Mix the cubes of cold butter with the flour. Cut the butter into the flour with a pastry cutter or your fingers until they look like rough lumps. The butter should be evenly distributed in the flour.
The fourth step:
In the middle of the flour mixture, make a well and pour in the cold milk. Stir the curd into the flour mixture using a fork or your hands until a soft dough forms. Be careful not to overmix, as this can make the cookies tough.
Step Five:
Sprinkle a little flour on a clean surface. Turning dough out onto the floured surface & knead it gently few times, until it comes together.
Sixth step:
The dough should be 1.3 cm thick and square in shape. Fold the dough in half and press down again with your hands. Fold this paper like this two more times. These folds will give layers to the cookie, making it flaky.
Seventh step:
After the last fold, pat the dough 1/2 inch (1.3 cm) wide. Cut out the cookies from the dough using a circular cookie cutter. To ensure that the cookie rises evenly, press the knife down and do not twist it.
Eighth step:
Place cookies on prepared baking sheet. Leave a small space between each cookie. If you bring the cookies together, the edges will be softer. If you spread them a little, the edges will be more fragile.
Step 9:
Gather the rest of the dough and press it down gently. Repeat the process of kneading dough and making cookies until all the dough is used up.
Step 10:
Place the cookies on a baking sheet and bake in a hot oven for 12-15 minutes, or until golden brown. The cooking time may be different, so watch it to make sure it doesn't overcook.
Step 11:
Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
