* Ingredients :
°1 can (28 oz) tomatoes with juice
°2 cans (10 ounces) rutile (diced tomato and green pepper)
°1/4 cup chopped onion
°1 minced garlic clove
°1 whole jalapeno, quartered and thinly sliced
°1/4 teaspoon of sugar
°1/4 teaspoon salt
°1/4 teaspoon ground cumin
°1/2 cup cilantro (to taste!)
°1/2 whole lemon juice
+Note: This is a very large amount.
* Methods :
A 12-cup food processor is recommended, or you can process the ingredients in batches and then combine everything in a large mixing bowl.
Combine whole tomatoes, rutile, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Beat until salsa reaches the consistency you want -- I do about 10-15 pulses. Test the seasoning with tortilla chips and adjust as needed.
Keep the sauce in the refrigerator for at least an hour. Serve with tortilla chips or nachos with cheese.
