Hot Peach Cobbler

* Ingredients : 

°4 cups fresh peaches, sliced
°½ cup) sugar
°¼ cup light brown sugar
°1 teaspoon lemon juice
°1 cup all-purpose flour
°½ cup) sugar
°½ teaspoon of salt
°1 tablespoon baking powder
°4 tbsp.  tsp melt butter, cooled to room temperature
°1 tablespoon of vanilla extract
°¾ cup of milk

Preheat oven 375 degrees.
Add sliced peaches to a 3-quart ceramic baking dish, add sugar, light brown sugar and lemon juice. Stir to coat the peaches in the mixture.
Bake for 10 minutes.
While the peaches cook, in a medium mixing bowl, add the flour, sugar, salt and baking powder. Stir to combine.
Pour in the milk, melted butter and vanilla extract.
Remove the peaches from the oven and lay the batter on top of the baked peaches.
Continue to bake at 375 for 35 minutes until the top is crispy and golden.
Serve the cobbler hot or at room temperature.

Canned Peaches: Drain juice from peaches, add to baking dish, stir in 2 tablespoons sugar. Do not pre-cook the peaches, add the cobbler filling and bake the entire dish for about 35-45 minutes, until the filling has a nice golden crust.
Frozen peaches: let peaches thaw for about 10 minutes, stir in sugars, cornstarch and lemon juice. There is no need to precook the peaches, add the garnish and cook the dish for about 40-50 minutes.
Pre-cook only fresh peaches to give them more time to cook and soften.
All cooking times were determined using a 3-quart ceramic baking dish measuring 8 x 10.5. If you are using a different sized pan, please consider the baking time. Using a 9x13 pan will require less baking time.
