Fresh Apple Bundt Cake

 


Ingredients:


2 cups apples, peeled, cored, and chopped into bite-sized pieces

1 tablespoon of granulated sugar

1 teaspoon of ground cinnamon

3 cups of all-purpose flour

3 teaspoons of baking powder

1/2 teaspoon of salt

2 cups of granulated sugar

1 cup of vegetable oil

1/4 cup of orange juice

2 1/2 teaspoons of pure vanilla extract

4 large eggs

1 cup of walnuts, roughly chopped

1/4 cup of confectioners' sugar, for the final dusting

Instructions:


Get your oven preheated to 350 degrees F (175 degrees C) and start prepping your Bundt or tube pan by greasing it well and dusting with flour.


In a medium-sized bowl, mix your prepared apples with 1 tablespoon of granulated sugar and the ground cinnamon. Put that to one side for now.


In another bowl, sift together the flour, baking powder, and salt. Keep this on standby.


It's time to bring out your large mixing bowl. In it, you're going to combine the 2 cups of granulated sugar, vegetable oil, orange juice, vanilla extract, and eggs. Beat this mixture on high until it's silky smooth.


Now, gently stir in your previously sifted flour mixture.


Once your batter is well combined, it's time to fold in the chopped walnuts.


Start building your cake by pouring one third of your batter into your prepared pan. On top of this, sprinkle half of your sugared apple mixture.


Continue layering in this fashion, alternating between your batter and apple mixture. Make sure you finish with a layer of batter on top.


Bake your beautiful creation in your preheated oven for 55 to 60 minutes. You'll know it's done when the top of the cake springs back to the touch.


Once out of the oven, allow your cake to cool in the pan for around 10 minutes. After this, you can turn it out onto a wire rack to cool completely.


The final flourish? A generous sprinkle of confectioners' sugar, making your apple cake not only taste heavenly but look it too!
