Wet Burritos

 


Ingredients

1 lb ground beef

1/2 cup chopped onion

2 tsp minced garlic

1 tsp cumin

1/2 tsp salt

1/2 tsp pepper

4.5 oz diced green chile peppers

16 oz refried beans

8 oz tomato sauce

10 oz enchilada sauce

15 oz chili no-beans (such as Hormel)

6 large flour tortillas (burrito size, about 12 inches)

2 cups shredded lettuce

3 cups shredded Mexican blend cheese

Chopped green onions, for garnish

Additional toppings of your choice

Instructions

Preheat your oven to 400 degrees Fahrenheit.


In a medium skillet, brown the ground beef with the chopped onion over medium-high heat. Cook until the beef is evenly browned and the onions have softened.


Drain any excess grease from the skillet, then season the beef with minced garlic, cumin, salt, and pepper. Stir in the green chile peppers and refried beans until the mixture is well combined. Keep the skillet warm on the stove.


In a separate saucepan, whisk together the tomato sauce, no-bean chili, and enchilada sauce. Cook over medium heat until the mixture is thoroughly heated. Once done, turn off the heat but keep the sauce warm.


Divide the beef and bean mixture evenly into six portions directly in the skillet.


Take a plate and lay out a flour tortilla. Place one portion of the beef and bean mixture onto the center of the tortilla.


Add a sprinkle of cheese and shredded lettuce over the beef mixture, if desired. You can also add or substitute other vegetables at this point.


Fold the left and right sides of the tortilla over the filling, then fold the top and bottom sides over, enveloping the filling securely.


Repeat the folding process with the remaining tortillas.


Grease two 9x13 inch oven-safe baking dishes. Place the folded burritos seam side down in the dishes.


Pour the warm sauce from the saucepan evenly over the top of the burritos in the dishes.


Sprinkle the remaining shredded cheese over the sauced burritos.


Bake in the preheated oven for 15-20 minutes, until the burritos are heated through and the cheese has melted beautifully.


Serve hot, garnished with more lettuce, chopped green onions, tomatoes, sour cream, and any other toppings you like.
